Are you team Negroni or Team Boulevardier? If you’re new to the cocktail game, a Boulevardier is a Negroni but with the gin swapped out for a whiskey. I tend to lean towards bourbon. @cheersamericanspirits is an organization that has been doing a great job at making sure us Canadians have enough bourbon on the shelves. Drink: Boulevardier 1.25 part Bourbon Whiskey (I tend to go with a higher proof bourbon with high rye content to balance sweetness) 0.75 part Campari 1 part Sweet Vermouth (Method) Build in glass. A friend was visiting from Germany and asked, “why do Torontonians wear so much black?” Hard to say for sure so I told them it's probably best to ask @champagnepapi. On another note, we also like drinking black drinks and black sesame is one of my fav flavours so here's a little something inspired by Toronto fashion. *Sesame Infused Cognac 60g Black Sesame Seeds 500ml Cognac Method: Toast the sesame seeds in a pan and add to a sealable bag with all other ingredients. Vac on highest setting and submerge in a Sous Vide basin filled with water heated to 66˚C for 3 hours. Let cool to room temp and filter through a cheesecloth and coffee filter Drink: Fashion Week 2oz Black Sesame Infused Cognac 0.5oz Amaretto 1oz Lime Juice 0.25oz Rich Simple Syrup 5 drops Sesame Oil Miraculous Foamer Method: Dry-shake all ingredients. Add ice, shake again and strain Into a coupe glass.

Drink: Smokey Valentine 2oz Strawberry Mezcal 1/4 - 1/2 tsp Agave Syrup 1 dash Cardamom Bitters Pinch of Salt Infusion: Chop a container of strawberries and place in a dehydrator or an air fryer at 180˚f for approx 2 hours depending on the device. Measure out 30g of dried strawberry slices and place in a jar with 250ml of mezcal (I used Siete Misterios). Give a small shake and let sit for 6 hour. Strain and enjoy. Here’s one for those who like strawberry galore! Dehydrating the strawberries makes them extremely fragrant so you get a strong infusion in a very short amount of time. I’m capping off 2022 by sharing a behind the scenes look (read on in the captions!) at some of your favourite posts from this year. For the top performing reel of the year (posted in January), @drink.like.rus was about to launch his new cocktail menu at @fairmontroyalyork’s @librarybartoronto in Toronto and I was invited for a sneak peak before the menu became available to the public. This was the first time I had the “Birdbath Martini” which included a proprietary gin (Quill Gin), made specifically for the Hotel. I randomly snapped this footage and wasn’t exactly thrilled about it so I hadn’t even planned on publishing it. I was feeling super lazy one week and had let myself run out of content so I posted the video anyway, just to stay current, and it quickly became the most popular Reel of the year. Interesting how that works out. Drink: Birdbath Martini Recipe by: @drink.like.rus 2.5oz Quill Gin or Vodka 0.5oz Noilly Prat Dry 2 dash house orange bitters Fleur du Sel (Method) Stirred with cracked ice in our bespoke table side mixing glass. Garnish: Lemon zest. Served with olives.

I know you’re amped for Old Fashioned Week, so here’s a method for batching the mix! Drink: Batched Old Fashioned 1 bottle Bourbon (750ml) 3oz Simple Syrup 1:1 1oz Aromatic Bitters (Method) Using a funnel, pour all ingredients into a large empty bottle. You can pop the dasher cap off of the bitters for easier pouring. Close bottle and roll to combine. When ready, pour over ice and stir to dilute (10-15 sec). Zest an orange over top and enjoy!

As promised, here's how to make the LIttle Snowflake glass design. The original was created at @missthingshawaiian in Toronto, Xmas 2019. Then Bar Manager @djrobinjames filled the glass with a concoction of gin, Elderflower Liqueur and an acidified berry cordial. The Glass Design: -1 Large Marshmallow (you can go jumbo, but I got these perfectly sized marshmallows from @loblawson -Small Marshmallow, a toothpick and cloves for the snowman -Icing and shaved coconut for the rim -1 sprig of Fresh Rosemary -A Quarter to a Half oz of water to put at the bottom of the glass for freezing the scene to the bottom Use a Collins glass preferably with straight walls. If the marshmallow sits snug, that is ideal but not necessary. You can use this glass for any clear cocktail, but here’s what I’ve been sippin’. You can add 0.5 parts to the mix and make a batch for parties! Drink: Frosty’s Revenge 2.5 part London Dry Gin 2 part Seedlip Spice 1 part Creme de Menthe 0.5 part Creme de Cacao 1 dash (per drink) Cardamom Bitters (Method) Stirred

When making Negronis I tend to lower the amount of Campari and then use a vermouth that brings a touch of bitterness - such as an Italian vermouth like Cocchi Di Torino. I find this to be a bit more balanced in both the bitter and the sweet department. But that’s just my preference. . If you’re going camping, I’d suggest adding 0.5 parts water for dilution and then chilling the bottle any way you can. But if you have access to ice, best to just stir it with ice in the glass for dilution. #roughingit . Drink: Negroni 1.25 part Gin (I use something Juniper forward and the dryer the better) 0.75 part Campari 1 part Sweet Vermouth (I use a mixture of Cocchi Di Torino and a Dolin Red)
