Pasta salads forever 🫶🏼 Dressing: 1/2 cup olive oil 1/2 cup red wine vinegar 3 garlic cloves, minced 1 tbsp italian seasonings 1 tsp salt 1 tsp pepper Pinch of red pepper flakes Pasta salad: 20 oz tortellini (fresh from the refrigerated section) 6-7 oz salami, diced 2 cups diced cherry tomatoes 1 cup diced bell pepper 1 cup diced cucumber 1/3 cup roughly chopped fresh basil 8 oz mozzarella pearls 1/4 cup diced red onion or shallot 1. Whisk dressing ingredients together first then set aside. 2. Cook pasta according to package directions. Drain well and allow to completely cool. 3. Mix everything together in a large bowl. Gluten free biscuit-topped pot pie is the ultimate made-from-scratch comfort food, but made with super simple ingredients! I love this recipe so much- the original tofu version can be found at the link in my bio, and this version below! For the biscuit topping: ½ cup unsalted butter, melted 2 eggs 2 tbsp milk 2 cups almond flour 2 tsp baking powder ½ tsp sea salt ¼ tsp garlic powder More melted butter, for brushing the biscuits For the filling: 3 tbsp butter ½ of a medium yellow onion, finely diced 1 cup Yukon gold potatoes, diced into small cubed 4 cloves of garlic, minced 1 tsp Italian seasoning 1 Salt Black pepper, to taste ¼ cup gluten free all-purpose flour (OR sub 3 tbsp arrowroot starch) 2 cups bone broth 1 cup whole milk 3 sprigs of fresh thyme, stems removed About 4 cups shredded (cooked) chicken 2 cups frozen mixed vegetables 1. Start by making the biscuit dough. In a large bowl, whisk together the butter, eggs, and milk. Stir in the almond flour, baking powder, salt, and garlic powder. Set dough in the refrigerator to chill. 2. Preheat oven to 400°F 3. Heat a large oven-safe skillet over medium heat with the butter. Stir in onion, potatoes, and garlic. Allow to cook for 8 minutes. *if you don’t have an oven-safe skillet, you can transfer everything later to an oven-safe baking dish. 4. Next, whisk in the flour, italian seasoning, and salt and pepper then slowly pour in your broth while continuing to whisk. Add your milk of choice and the fresh thyme leaves. Give everything a good stir, then allow to thicken for 5 or so minutes. 5. Stir in your frozen mixed vegetables and chicken and allow to cook for another 5 minutes. 6. Using a cookie scoop out 8 biscuits on top of the filling. Brush each biscuit with melted butter. 7. Bake for 17-20 minutes, until filling is bubbly and biscuits are slightly browned and cooked through. I could eat this sheet pan meal every single day - the sweet and spicy tahini sauce is a classic from my blog that takes any meal to the next level!! For the tahini sauce: 1/3 cup + 3 tbsp tahini 1/3 cup water, plus more as needed 2 tbsp olive oil 2 tbsp apple cider vinegar 4 tsp of maple syrup 2 cloves of garlic, peeled Salt and pepper, to taste Sriracha, to taste, depending how spicy you like it Sheet pan: 5-6 pre-cooked chicken sausages, sliced 2 large sweet potatoes 1/2 of a small red onion Any other veggies of choice: brussels sprouts, bell peppers, carrots, etc.) 3 tbsp olive oil Seasonings: garlic powder, Italian seasoning, smoked paprika, salt and pepper 1. Roast veggies and chicken sausage at 425 for 30-40 minutes, until cooked to your liking. 2. Meanwhile, make the tahini sauce. Vodka Sauce Italian Baked Eggs. For a new spin on breakfast when you’re bored of the same old thing 😊 Cheesy eggs get baked in a creamy vodka sauce- doesn’t get much better than that! It’s simple, quick, and absolutely delicious. RECIPE (serves 2) 1 cup vodka sauce (store bought or homemade) 1/4 cup whole milk 1 tbsp parmesan 1/4 cup italian blend shredded cheese S+P Fresh basil Red pepper flakes (optional) 1. Preheat oven to 425. Grease (2) 10” ramekins, or use an oval baking dish to bake everything together as seen in the video (or you can use a cast iron pan) 2. Mix the vodka sauce and milk. Divide between the ramekins if using two. Crack in the eggs, then top with cheeses, salt, pepper, red pepper flakes, and fresh basil. 3. Bake until eggs are cooked to your liking, anywhere from 12-25 minutes depending how runny you like your eggs. Orange cashew chicken sheet pan meal!! Based off one of the top recipes from my blog so you know it’s going to be a winner 😇😇 RECIPE (3-4 servings) For the sauce: 1/3 cup coconut aminos 2 tbsp rice vinegar 2 tbsp honey 2 tablespoons tomato paste Juice of 1 orange 1 tbsp of sesame oil 3 cloves garlic, minced 1/2 tbsp minced ginger Black pepper, to taste Red pepper flakes, to taste Optional: sriracha for more spice For the sheet pan: 1.5 lb boneless skinless chicken thighs, diced 2 head of broccoli, cut into florets 1 tbsp olive oil 1 tbsp tamari (gluten free soy sauce) 1 tbsp arrowroot starch (can sub corn starch) Salt + pepper, to taste 1/3 cup cashews 1. Preheat oven to 425F. 2. Whisk all sauce ingredients together and set aside. 3. Prep broccoli and chicken. Toss broccoli with half of the olive oil and spread out on half the pan. 4. Toss the chicken with 1/2 tbsp olive oil, plus the tamari and arrowroot starch. Spread out in an even layer on other half of the sheet pan. Season everything with salt and pepper. Bake for 15 minutes. 5. Toss chicken with about 2/3 of the sauce plus cashews, and the broccoli with the remaining sauce. This one is for my fellow feta lovers 👋🏼 Baked feta sweet potatoes and brussels with hot honey - the best way to get your veggies in !! 3 cups cubed sweet potatoes (this was 1 extra large potato for me) 1 lb brussels, ends trimmed and sliced in half 4 whole cloves of garlic, peeled 1 tsp oregano 1/2 tsp paprika 1 tsp sea salt 1/4 tsp black pepper 3 tbsp olive oil 8 oz block of feta 2-3 tbsp hot honey (sub regular honey if you don’t want it spicy) Optional: red pepper flakes 1. Preheat oven to 425. Add your sweet potatoes, brussels, and garlic cloves to a large baking sheet. Toss with the seasonings and olive oil. 2. Create a space in the center for your feta. Drizzle everything with a little more olive oil. 3. Bake for 35- 45 minutes, until veggies are cooked to your liking. Remove from oven and drizzle with honey. Return to oven for 5 minutes. 4. Crush up your garlic cloves and the feta. 🍯🌶️🥓🥕 I cannot explain how delicious these carrots are!! 100% my new favorite side dish, and they’re only 3 main ingredients: 1/2 lb of bacon 8 carrots (or how every many pieces of bacon are in your package) 3 tbsp hot honey, divided Fresh thyme Flakey sea salt (I used @maldonsalt) Black pepper, to taste 1. Preheat oven to 350F. Line a large baking sheet with parchment paper or aluminum foil, then set a wire cooling rack on top. 2. Wrap each carrot in bacon and place on the wire rack. Season with salt and pepper and add some fresh thyme. 3. Roast for 20 minutes. Remove from oven and glaze the carrots with 2 tbsp of the honey. Return to oven for 20-30 minutes, until carrots are fork tender (but not too soft) and bacon is crispy. Cook times will vary depending on size of carrots and your oven. 4. Drizzle with another tbsp of honey and sprinkle with flake sea salt. Serve immediately and enjoy! #carrots #bacon #sidedish #glutenfree #grainfree #easyrecipes #healthyfood #healthyrecipes #dairyfree
