How CY Eats Chili Oil Began…

I used to travel extensively all over China for work (pre-Instagram), and I developed a serious love for the country & all of its incredible food. I had explored NYC’s Chinese food scene, but I never experienced the depth & breadth of the flavors that I found in China. And the same goes for CHILI OIL! Nearly every restaurant, from fancy to hole-in-the-wall, would offer an AMAZING chili oil! When I stopped traveling to China for work, I missed all of those rich flavors so much. But I couldn’t find a chili oil here remotely similar to what I had tried in China. And I had no idea how to make my own.

    Play video 'Decadent Cheesy Kimchi Ramen 🧀🍜 (Recipe below) After @murrayscheese awarded me the title of official Certified Cheese Lover 🫡, it was imperative that I create a delicious cheese recipe today. And this is the perfect recipe for National Cheese Lover’s Day (or any day) 🧡 I used Jumi Chili Raclette from @murrayscheese (of course) and melted it in my barbaclette on the stovetop while I prepared the ramen. Everything else, I always have at home (instant ramen & dried shiitakes in the pantry and homemade kimchi, garlic & scallions in the frig). I rounded it out with some leftover pork & veggies. It was AMAZING! Recipe for raclette kimchi ramen Ingredients: 1 packet of your favorite instant ramen 1 tsp sesame oil 1 tsp minced garlic 3/4 cup kimchi 1-2 shiitake mushrooms, sliced 1 1/2-2 cups dashi or water 1 medium thick slice Jumi Chili Raclette Optional add-ins: cooked pork, other vegetables 1. (Optional) Make a dashi broth. 2. Put the raclette cheese in a pan or your barbeclette pan and heat over low heat. You may need to move it around so it melts evenly. 3. In the meantime, heat a small pot over medium heat, add sesame oil, then garlic. Stir and let cook for 30 seconds then add kimchi and shiitakes. Mix that up for another 2-3 minutes. 4. Add dashi or water (use 1 1/2 cups if you want a creamier consistency) and bring to a boil. Add instant ramen noodles & seasoning packet. Cook til noodles are just done. Remove from heat. 5. Top with more kimchi, scallions, and any other add-ins you want. Then slide the melted raclette over the top. Raclette will melt into the soup and throughout the noodles.
